Super Delicious Black Bean Soup

This is a hit every time! Even for those who think they do not like black beans. The toppings are the flavor enhancers in this one!

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Super Delicious Black Bean Soup serves 4

 

 

 

1 tablespoon vegetable oil

1 medium onion, finely diced

½ cup chopped carrot

1 clove garlic, minced

1 t. ground cumin

1 t. chili powder

2 t. dried oregano

1 chipotle chili packed in adobo, finely chopped, plus 1 tablespoon adobo sauce from can (optional)

3 cups chicken or vegetable broth

1 (15-oz) can black beans, with liquid

1 (15 oz) can diced tomatoes

1 cup corn, fresh, frozen or canned

½ teaspoon salt

 

Toppings:

Cilantro

Sour cream

Diced avocado

Shredded cheese

Lime

 

 

 

 

 

Procedure

  1. Heat vegetable oil in a large saucepan over medium heat. Add onions and carrots and cook, stirring frequently, until softened but not browned, about 3 minutes.

  2. Add garlic, chili powder, cumin, oregano, chipotle pepper and salt. Stir constantly until fragrant, about 1 minute.

  3. Add chicken or vegetable broth, beans and their liquid, tomatoes and corn. Increase heat to high, and bring to a boil. Reduce to a bare simmer, cover and cook for 20 minutes.

  4. Ladle soup into individual serving bowls and serve immediately with cilantro, sour cream, diced avocado, lime and cheese (as desired).
