Why put potatoes in a chocolate cake? To add moisture for a better "crumb" as they say in the bakers world.
Chocolate potato cake Makes one 8x8 pans
3 T. cocoa powder
1 cup flour
½ tsp. baking powder
¼ tsp. baking soda
¼ tsp. salt
¼ tsp. cinnamon
½ cup butter
¾ cup sugar
½ tsp. vanilla extract
¾ cup leftover mashed potatoes
½ cup buttermilk
Sift together the cocoa powder, flour, baking powder, baking soda, salt, and cinnamon.
Cream the butter and sugar and beat in the eggs one by one.
Add the potatoes.
Beat in the dry ingredients alternately with the buttermilk.
Pour into a greased 8x8 pan and bake in a preheated 350 degree oven for approximately 30 minutes.
Super Delicious CHOCOLATE FROSTING
½ stick butter, room temperature
¼ cup cocoa powder
1 cup powdered sugar
2-3 T. milk
½ tsp. Vanilla
Add everything together and mix with an electric mixer until the consistency you want.
Add small amount additional milk, if needed. Makes about 1 cup frosting.
