Oatmeal Rhubarb Bars

This recipe can be made with just about any kind of fruit.

 

 Oatmeal Rhubarb Bars

 

Makes 1 8x8 pan

 

Crust:

 

1½ cups rolled oats

1 cup flour

½ teaspoon salt

1/3 cup brown sugar, packed

1/3 cup cold butter, cut into chunks

¼ teaspoon vanilla

 

Filling

 

1½ cups chopped rhubarb

1/3 cup brown sugar, packed

4 t. cornstarch

4 T. cold water

1 t. lemon juice

1 t. vanilla

 

Directions:

 

1. In a large saucepan, combine the rhubarb, 1/2 cup brown sugar, cornstarch, cold water and lemon juice. Bring to a boil stirring occasionally. Reduce heat to medium; cook and stir for 4-5 minutes or until rhubarb is tender and sauce is thickened. Add vanilla ; set aside.

 

2. In a large bowl, combine the oats, flour, salt and brown sugar. Toss in butter and vanilla and mix with your fingers rubbing the butter in with the dry ingredients until mixture is crumbly.

 

3. Press half of the oats mixture into a greased 8-in. square baking dish. Spread with rhubarb mixture. Sprinkle with remaining oat mixture.

 

4. Bake at 350° for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into squares. Yield: 9 bars.
